- 1/2 pound patty pan or other summer squash cut into 1-inch chunks
- 1 shallot sliced thin
- 1 teaspoon fresh thyme chopped
- 1 tablespoons olive oil
- sea salt , just a pinch

Instructions
- Preheat oven to 400°F.
- Toss squash, shallot, thyme, olive oil and salt together in a bowl. Spread onto a sheet pan.
- Bake 15 minutes, until tender. Serve hot or room temperature.
