Ingredients
- 1 egg , beaten
- 1 teaspoon onion , powder
- 3/4 teaspoon garlic , powder
- 1 pinch cayenne
- 1/8 teaspoon sea salt
- 1/4 teaspoon black pepper
- 130 grams zucchini
- 2 teaspoons extra virgin olive oil
- 15 grams cheddar cheese , low-fat

Instructions
- Add the onion powder, garlic powder, cayenne, salt and pepper to the beaten egg. Mix well with a fork to combine.
- Using a cheese grater, grate the zucchini and add it to the beaten egg mixture. Toss to evenly combine the mixture.
- Add the olive oil to a medium skillet over medium heat. Place the zucchini hash into the skillet and use a spatula to flatten it to about ½-inch thick. Cook the hash until the bottom is golden, then flip the entire hash and sprinkle the cheddar cheese on top of the hash.
- Cook until the other side is golden, then remove from heat. Season with salt, pepper and fresh herbs if desired.
